  • 500 g bread flour
  • 400 ml warm water
  • 7 g instant yeast
  • 10 g salt
  • 50 ml olive oilplus more for the pan
  • 1 handful fresh rosemary & thymefrom the garden

Method

    Whisk flour, yeast, and salt. Add water and oil; mix to a shaggy dough.

    Cover and rest 2 hours until doubled and bubbly.

    Oil a pan, stretch the dough, dimple with your fingers, top with herbs and flaky salt.

    Bake at 220°C (430°F) for 22–25 minutes until deeply golden.

Notes

Swap the herbs for cherry tomatoes and olives when the vines go wild.
